We asked each caterer to provide us with their favourite holiday season recipe to prepare for guests - and as a gift to you from all of us at ExPlaceTO, Cerise Fine Catering and Spectra Food Services, we've posted them here for you to enjoy!

Holiday Chocolate Chip Cookies - from Cerise Fine Catering
Makes 2 dozen cookies
1 ¾ cups of all-purpose flour
¾ tsp baking soda
¾ tsp salt
1 ½ cups of semi-sweet chocolate chips
¾ cup packed brown sugar
½ cup granulated sugar
¾ softened un-salted butter
1 large egg
¾ tsp vanilla extract
½ cup chopped nuts (optional)
Pre-heat oven to 375F
In a large bowl, beat butter, egg, sugar, and vanilla until blended
Add flour, baking soda, salt, chocolate chips and (optional) nuts, mix well.
Drop by rounded tbsp onto ungreased baking sheet, spacing the cookies 2 inches apart. Bake for 9-11 minutes or until golden brown.
Cool on baking sheets for 2 minutes, remove and cool on wire racks.

Christmas White Chocolate Crème Brûlée - From Spectra Food Services Chef Geoff Carter
1 litre 35% cream
1tsp vanilla pod
Combine and bring to simmer
Mix 12 egg yolks with 1/2 cup sugar
add cream mix to yolk/sugar - mix in slowly while whisking continuously
7oz White chocolate nibs - pour cream and egg mix over top
Let sit 5 minutes then stir until chocolate melts
Divide mixture into 6oz ramekins
Place in water bath
Cook in oven at 300° for 1 hour, or until mixture sets
Cool and let sit in fridge overnight (can be made 3 days ahead)
As required - candy cane- break up in food processor until sugar size
Sprinkle top of brûlée with candy cane “dust”
Caramelize with blow torch (kitchen type)
Serve with your favourite Christmas cookie, berries and whipped cream
